Indian style Kheer Recipe

This is a well-liked recipe for kheer, flavored with rose water and cardamom. Offer warm or cold. Milk, nuts and rice are viewed as ‘satvic’ meals in Ayurveda. Satvic meals assist in balancing one’s subtle energies, feed the body, the mind and eventually, lead the way for one’s spiritual evolution.

Ingredients

  • 2 liters semi-skimmed milk
  • 75gm white rice
  • 4 pods cardamom
  • 1 tsp finely chopped almonds
  • 1/2 tsp rose water
  • 300gm caster sugar

How to make Kheer recipe

  1. Place the rice in a normal size bowl and cover with water. Steep for one hour.
  2. Bleed dry the rice and place it in a large, heavy pan with the milk over low heat. Cook for 50 minutes, stirring irregularly, until tender. Mix in sugar and cardamom and cook it 20 minutes more.
  3. Take out from heat and mix in the rose water.
  4. Serve topped with almonds.
